The macaron has always been the standout of the pastry world to me. It embraces French glamour and a very finicky baking process, so it has always been this elusive pastry. I became determined (obsessed) to create a perfect macaron for my friends to enjoy. It soon became more than that. Although our macarons do not contain any animal products (with the exception of our local honey) and no gluten, we want to focus on the idea that they are for everyone. Many long time traditional macaron lovers are now loyal fans and we are excited to create a kinder macaron for all.
