HOW IT STARTED
I’ve always loved baking as a way to explore creativity and show love to other people. One of my best friends is vegan and I wanted to be able to share that love with her. That challenge sparked a passion for experimenting and finding new ways to bake. I dove into the science of vegan baking, testing ingredients and techniques to see what worked. The macaron, the dessert I loved most, didn’t have a vegan version I liked, so I spent over a year experimenting until I created one that finally felt right. I had found a way to redefine a macaron.
THE NEXT STEPS
Once I began sharing my macarons the orders started coming in, and I moved baking into a commissary kitchen. Things took off when the Denver Botanic Gardens carried Denver Macaron, and our growth continued through Instagram and local markets. That’s when Nikki, an accomplished pastry chef, joined Denver Macaron full-time, helping run the kitchen and operations, and we realized it was time for our own dedicated space to focus on our vegan and gluten-free macarons.


WHERE WE ARE NOW
In February of 2025, we got our very own kitchen, a space where we can continue to make and share our macarons. We’re endlessly inspired to make the highest quality macarons that have incredible flavors. As we continue to grow, our excitement only deepens for the chance to create, to share, and to have you along on this journey with us.
